A Different Culinary and Drink Experience in the Retreat of Andrummet

In Kiruna, where the three cultures of the Sami, Torne Valley Finnish and Swedish meet, you will find our secluded house called Andrummet, which means "breathing space". This is a place to come together around an open fire, a place to clear your thoughts and where we have chosen the best of the three cultures in order to express them together in our own breathing space. Andrummet is a retreat house created for inspiration with a form and environment like nothing else.

Cooking Course

Your group gathers for an afternoon in Andrummet and is guided in an introductory cooking course inspired by the Norrland kitchen. We will be taking consideration to nature, the culture and the people.

The group is guided by an expert cook who will acquaint you with the food and culture that has evolved here through many generations. You will together prepare selected parts of the meal to be served that evening.

Following the course, you will have the opportunity to relax in your rooms before the evening's highlight. This will be a five-course gourmet meal accompanied by a carefully coordinated drinks package. The menu is composed of the very best of wild produce harvested from our forests, lakes and rivers in this northernmost region of Scandinavia.

As you dine, your waiter will tell you about the particular wines chosen for each course. You will take with you our knowledge of food and drink, and hopefully be inspired in you daily life. At the closing of the meal, traditional boiled coffee will be prepared directly over the open fire and our conversation revolving around food and culture can continue until long into the night...

"From Coast to Mountains" A gastronomical journey through the Torne Valley

Starters
Salted whitefish in a thick sour cream dill sauce, served with dark cranberry crisp bread and regional bleak roe from Kalix.

First Course
A traditional moose dish served with bullion-prepared root vegetables and rye dumplings, accompanied by delicate traditional flatbread, Rieska, and cream cheese

Main Course
Smoked wild salmon served with "dopp i kopp", a savory butter sauce, and pickled red onion crème

Dessert
Vanilla pudding with rum-marinated lingonberries, cloudberry sorbet and butter-fried barley porridge

"Produced Locally" A tour of the highland mountains of Kiruna

Starters
Raw-spiced hare served with herb sorbet, raw-preserved lingonberries and mayonnaise of Shiitake mushrooms cultivated underground in the Kiruna mine

Main Course
Souvas, lightly-smoked reindeer from the village of Soppero, served with almond potato purée, black currant reduction and winter vegetables

Dessert
Traditional warm cheese cake from Norrland served with whipped sweet cream and raw-preserved cloudberries

"Innovative Traditions" A taste of ancient cultures

Starters
Cold-smoked arctic char confit, prepared using ecological Swedish rapeseed oil, topped with dill, served with a mild root vegetable crème and pickled red onions 

Main Course
A savory reindeer dish served with regional almond potatoes from Tornedalen and locally-picked lingonberries, traditional Sami flatbread, Gahkú, and whipped butter

Dessert
Butter-fried spiced caked served with ice cream made from a traditional buttermilk base, completed with a mountain cranberry sauce
